To prepare the ginger break off a piece and peel it with a spoon.
A spoon is the perfect tool for the job because it can get around the little knobs and into the nooks and crannies of the ginger.
To mince ginger:
Slice it and stack it on to off itself, slice the ginger into strips. Turn it 90-degrees and slice in into tiny cubes. Then chop the ginger in a rocking motion like this until it is finely minced.

Ginger Syrup:
peel and dice 2 tablespoons of ginger, add it to 1 cup sugar and 1/2 cup water, bring to a boil, remove from heat, allow to steep until it cools to room temperature. Strain and keep refrigerated. Use for cocktails and cooking.
