PROCESS:
Dressing:
Squeeze the lime juice in a small bowl. Add the fish sauce (aka nam pla), season with salt, sugar and red chili flakes. Shave the garlic into bowl ( the thinner the better, chop and add the cilantro, slice the greeen onions as thin as possible, add. Reserve for the salad, this dressing makes a fabulous sauce to dip grilled meats into.
Salad:
Place all ingredients in a large bowl, add dressing and mix well.
Divide equally on two large plates. Garnish plates with oranges, tomato wedges and sliced lemon and lime.
Steak:
Season a 12 ounce strip with soy and sprinkle with Steak Madness
Grill or broil to medium-rare. Slice and place atop the salads.

1/2 head iceberg
2 cups mixed baby salad greens
1/2 cup cucumber, sliced
1/2 cup red onion, shaved
1/2 red bell pepper
4 green onions, 1/2 inch
1 tomato, sliced into wedges
4 green onions, sliced
12 leaves fresh basil, sliced
12 leaves fresh mint, sliced
1/2 cup cilantro, chopped
2 cups mixed baby salad greens
Garnish:
1 tomato, sliced into wedges
1 Orange, cut in sections
Lemon and lime slices
Steak:
1 pound strip loin
1 tablespoon soy sauce
1 tablespoon Steak Spice
