PROCESS:
In a large bowl combine, soy sauce, green curry, cilantro, garlic powder, onion powder, white and black pepper, stir well to dissolve green curry. Add the pork or chicken to the curry bowl and mix well.
Form the meat into eight little patties approx. 3 ounces each.
Grill the patties until they're cooked all the way through.
Mango Mayo / Dressing:
In the food processor or blender combine can of mangoes, mayonnaise, ginger, granulated sugar, lime juice and sesame oil, process until smooth.
Assemble the Burgers:
Place the cocktail buns on a platter and top them with a dollop of mango mayo and the cooked Big Island Burgers. Top the burgers with the Big Island Slaw and the top of the bun.

1 cup mayonnaise
2 tablespoons minced ginger
1 tablespoon sugar
2 tablespoons lime juice
1/4 cup sesame oil
