Looking for a fun-n-easy culinary challenge in your kitchen tonite...? If you love to cook, ya gotta try making Fresh Pasta, it's really pretty simple. Fresh pasta is one of those things that is so different from the dried version it's amazing.
Place the flour into a big bowl. Make a well in the center of the flour so it looks like a little volcano. Crack 6 whole eggs into another bowl and add a pinch of salt and olive oil, whisk this together with a fork and pour it into your flour volcano. Here comes the fun part, dive in, hand-mix it all together until it's one big ball so we can get it out of the bowl in one chunk. Dust your counter with a little flour and knead the dough until it's firm and smooth, kinda like playdough. You can also make this dough in a food processor, but it's nowhere near as much fun, either way, you want the dough to be silky smooth. If the dough is sticky, add a little flour and keep kneading.
Cover the dough and let it relax for thirty minutes while you get the Cooking water ready and clean up your mess. Cut the dough into six pieces about the size of a cue ball. Roll the dough out flat and thin, like an old Sinatra Album. You can use a rolling pin, or a pasta machine, cut the pasta to whatever shape your little heart desires. Add some salt & olive oil to a big pot of boiling water.
Drop in the pasta. Cook it for 5 minutes then test it to see if it's firm. Remember fresh pasta cooks much faster than dried. Cook the pasta until it's firm . Cook it & serve it...Don't try to hold it or re-heat it.
