PROCESS:
Wash spinach and micro-greens in ice cold water. Dry well with a paper towel, refrigerate while preparing the rest of the ingredients. Place sliced almonds on a baking sheet, toast in a 400 degree oven until golden brown. Allow the almonds to cool to room temperature. Slice the hearts of palm, red onions and button mushrooms. Place all ingredients in a large bowl with the spinach and micro greens
Toss and serve with:
